Mediterranean Style Halibut
 
Recipe instructions: Begin by seasoning the halibut with the salt and pepper. Then saute this in some olive oil and butter. Once browned set the fish aside. Saute the garlic, capers, olives and white onions unti lthey become caramelised. Then using the white wine, deglaze. Add in any other remaining ingredient and cook for a few minutes on a high heat. Place the halibut back in the saute pan and then finish cooking in the oven on 400 degrees for 10 minutes.

1 Halibut Steak, 2 TBS Olive Oil, 1/4 Ounce Butter, 1 TBS Garlic, 3 TBS White Onions, 1 TBS Capers, 3 Kalamata Olives, 3 Spanish Green Olive, 1/3 Cup Chardonnay, 5 Whole Peeled Tomatoes, 1/2 Cup Tomato Juice, 1 TBS Fresh Basil, 1 TBS Fresh Oregano, Salt Pepper To Taste.
