Carrot and Coriander Soup
 
Recipe instructions: Carrot and coriander soup recipe. Chop the stalks off the coriander and discard. Finely chop the rest. Add chopped carrots, coriander, chopped onions into the saucepan with the stock, Add more water to make up to the amount needed. Season with salt and pepper. Heat until the carrots are soft. Blend until pureed. Pour the pureed soup into a fresh saucepan. Add four tbls of single cream and stir. Re-heat the soup, but do not boil. When you server add a little cream for decoration, then place a coriander leaf or two on top.

Ingredients:
2 chopped onions, 800 grams of carrots, chopped, 2 chicken stock cubes in half a litre of water, 100 grams of fresh coriander, 4 tablespoons of single cream
Timescale:
This meal takes 20 mins to prepare and 5 mins to cook.
This meal will serve 6 people.
