Wiener Schnitzel
 
Recipe instructions: Wiener Schnitzel recipe. Place the flour and the breadcrumbs on two separate plates. Mix the egg, the salt, pepper and olive oil in the third plate. Dredge the escalopes in the flour, shake off the excess, then dip them in the egg mixture and finally in the breadcrumbs. Fill a large frying pan with melted lard or oil about 1/2 inch deep and place the pan over moderate heat. When the fat is very hot, fry the escalopes, 1-2 at a time, until golden on one side. Turn them carefully and fry on the other side. Drain the meat on absorbent paper and cook the rest. When fried and drained, place on a baking tray and place in a heated oven at 180 degrees centigrade for approximately 15 - 20 minutes. Garnish with grated hard boiled egg and a wedge of lemon. Serve with a green salad.

Ingredients:
4 veal escalopes, 150g/5oz each, trimmed and beaten flat flour fresh breadcrumbs from bakery or packet of natural breadcrumbs to coat 2 eggs pinch salt 1/4 tsp ground white pepper 1tsp olive oil pure lard or vegetable oil for frying To garnish: 1 lemon cut in wedges and 1 hard boiled egg
