Chicken Casserole
 
Recipe instructions: Chicken casserole recipe. Set the oven to 170 degrees centigrade. Once the casserole dish is hot, pour in the olive oil. Add the onions and turn down the heat to medium. Once the onions are soft, add the chicken portions. (you can do this in two batches if you cant fit them all in). Leave a few minutes to brown then turn them over. Once they have browned on the other side, add the chicken stock. You should only add enough so that it reaches half way up the chicken. If you dont have enough stock you can add water to the pan to reach the level required. Add the carrots, season with salt and pepper. Coat the carrots with some of the stock and put on the lid. Place in the oven for 11/2 hours. Serve with rice, mash or ribbon noodles.

Ingredients:
chicken portions on the bone coated with plain flour and seasoned with salt pepper and paprika 2 small onions thinly sliced 6 fl oz chicken stock made with 2 chicken cubes 3 medium carrots thickly sliced 6 tbls olive oil
Timescale:
This meal takes 20 mins to prepare and 1 1/2 hours to cook.
This meal will serve 3 portions of chicken would serve three people people.
