Blueberry Muffins
 
Recipe instructions: Start by sifting the flour, baking powder, baking soda, sugar and salt into a large bowl. Then set this aside. In another large bowl, whisk the oil, sugar, yoghurt and egg. Then add the dry ingredients. Make sure you reserve 1 tbl of the dry ingredients and toss with the blueberries. Stir the mixture until it is combined. Then fold in 1 and half cups of blueberries to the mixture. Then using a spoon put the mixture into greased muffin pans. Place the pan into the oven on 400 degrees and bake for 20 - 25 mins. Remove from the oven and once cooled turn out upside down on to a tea towl to cool completely. You can store these in an airtight container for 2 to 3 days.

Ingredients:
12 Ounces All Purpose Flour, 1 TSP Baking Soda, 2 TSP Baking Powder, 1/2 TSP Salt, 1 Cup Sugar, 1/2 Cup Vegetable Oil, 1 Egg, 1 Cup Yogurt , 1 1/2 Cups Fresh Blueberries.
