Vegetarian Stir Fry
 
Recipe instructions: Start by cooking the rice in either rice cooker or in a saucepan with water. The sauce in this stir fry is made as follows: combine the ginger, garlic, teriyaki, chicken stock and mae ploy in a bowl. Then in a wok on a high heat add the sesame oil. Once hot saute the peppers and tofu. Deglaze with the sauce and add in the remaining ingredients. Then cook the stir fry for approximately 5 mins. You want the vegetables to be al dente so do not over cook. Then serve over a bed of rice.

Ingredients:
1 Cup jasmine rice, 11/2 Cup water, 1 TBS ginger, 1 TBS garlic, 2 TBS Teriyaki, ½ Cup chicken stock, 1 TBS mae ploy, 2 TBS sesame oil, 1/3 Cup each red, yellow, and green peppers, 1 Cup tofu, 1/3 Cup each broccoli, eggplant, squash, and snow peas, 1 Bunch bok choy, 1 TBS each basil and cilantro (coriander)

This meal takes 10 mins to prepare and 35 mins to cook.
