Asian Seared Duck Breast
 
Recipe instructions: Start by scoring the breasts with a knife and place them in a bowl. Add to the bowl the orange juice, chilli paste, and coriander/cilantro and mix together. Place this marinade in the fridge for 30 mins. Then once the 30 mins is up, heat a frying pan and add in the soy sauce, and sear the duck breasts skins side down first. Then turn over once the skin has caramelized. Once they are cooked set them aside. Then in the same pan caramelize the garlic, ginger and scallions. Then add the red wine, red wine vinegar and soy sauce. Deglaze the frying pan with the liquid mixture and reduce by half. Then finish by adding the butter.

Ingredients:
2 Duck Breasts, 3/4 Cup Orange Juice, 1/3 Cup Garlic Chili Paste, 2 TBS Fresh Cilantro (coriander), 1 TSP Soy Sauce. Sauce: 1 TSP Garlic, 1 TBS Fresh Ginger, 1/3 Cup Green Onions, 1/3 Cup Red Wine, 1/3 Cup Red Wine Vinegar, 1/3 Cup Soy Sauce, 4 Ounces Butter.
