Carmelized Apple Stuffed Chicken Breast with Cider Sauce
 
Recipe instructions: Start by adding one oz of the butter to a hot frying pan. Then add the apples and caramelize. Once the apples have cooked, place in a bowl and add the cranberries and goats cheese and mix. Set aside. Cover the chicken breasts with plastic wrap and with a tenderiser or other implement beat the breasts until they are half inch thick. Season the breasts with salt and pepper. Spread the apple stuffing mix onto the breasts and roll up (see video). Season again and in a hot frying pan add the oil, then sear the chicken breasts. This will keep them shut. Fry until golden brown all over. Transfer to a baking sheet and finish in the oven on 350 degrees. for 5 to 10 mins. Then using the same pan that the chicken breasts were in, deglaze with apple cider, scraping the bottom of the pan so as to get all the food pieces incorporated. Add cider vinegar, chicken stock and thyme. On a high heat, reduce by half. Adjust seasonings and finish wtih 1 oz of butter. Pour this sauce over the cooked chicken.
