Chicken Piccata with Lemon Zest and Fresh Thyme
 
Recipe instructions: Begin by seasoning the chicken breasts with salt and pepper.. Heat a frying pan and when hot add 1 tbls olive oil. Sear on both sides until golden brown and then cook through. Once done set aside. In the same pan caramelize the shallots, garlic and capers. Deglaze with the wine and reduce until almost disappeared. Then squeeze in lemon juice and add the chicken stock and cook until it has reduced in half. Take off the heat and stir in the thyme, butter, lemon zest and then season to taste. Pour over the chicken breasts and serve.

2 Chicken Breasts, 1 TSP Olive Oil, 1 TSP Chopped Shallots, 1 TSP Chopped Garlic , 1 TSP Capers, 1/3 Cup Chardonnay, Juice of 1 Lemon, 1/3 Cup Chicken Stock, 1 TSP Fresh Thyme , Zest of 1/2 Lemon, 3 Ounces Unsalted Butter, Salt Pepper To Taste.
